      Sourdough on board a Mac

This is pure delight onboard your Mac.

      the starter:

1 package of active dry yeast
      2 cups warm water
      2 cups all purpose flour.

In a large “non metallic) bowl mix together and cover loosely
Leave in a warm place to ferment for 5-8 days (place on plate incase of overflow)
When mixture is bubbly, and has a pleasant sour smell, it’s ready. If mix is pink… orange or a strange colour. Throw it out! and start over

Keep in cool area till ready to use.

When using starter to bake, always replace with equal amounts of flour and water and a pinch of sugar. If you used up a cup of mixture add 1 cup of flour and 1 cup of water, mix well and leave on counter till bubbly again.

If a clear or brown liquid accumulates on top… no worries it is the alcohol base liquid that occurs with fermentation… just stir and keep in cool area.

Sourdough improves with age… Just like me!!!

Add 1 cup of sourdough mixture to your bannock mixture and Kazamm… you have a bread feast.
