      Ohana’s Salmon Stew

      Full salmon – deheaded & finned, cut in half fillet style
      lemon
      butter
      salt

      1/2 – 1 onion – diced
      garlic – minced
      1 jar Something Special Gourmet Antipasto (Costco)
      2 large cans diced tomatoes (947 ml ? each)

      Lay out salmon and grill on pan covered with tin foil – broil 350 (or could bbq)
      Season with lemon, melted butter and salt.
      Broil until ready. Debone as best as possible.

      Saute diced onion and garlic in olive oil in large pot.
      When soft add antipasto, stir.
      As heating, add broken apart salmon, continue looking for bones.
      Add diced tomatoes, heat thru.
      Taste, can’t remember if needs salt.

      Antipasto ingredients:
      Tomatoes, cauliflower, carrots, sweet pickled onions, green beans, dill pickles, black olives, green olives, mushrooms, green peppers, red peppers, tuna, canola oil, distilled vinegar, sugar, salt, olive oil, natural flavourings.
      Serve on own or over rice, will have juices.
      Freezes well…defrost and heat in pot until ready.

        Hey Ohana,

        Is this the amazing stew that you served at the Potluck Dinner in Gibson’s? If it is, thank you sooo much for posting the recipe … that stuff was absolutely amazing!
