Commodores Kabob

One of the great things that happen over the centuries at sea, is that sailors would bring back a variety of spices that would tease our pallets.
The 2008 MacRendezVous found such a reciepy.
Commodores kabob:
1 pound of lean ground beef or lamb, or veal, pork, or even chicken
1/4 C chopped currents or raisins or half & half
1/4 C dry bread crubs (I get a box of turkey stuffing cubes with herbs and put it through a blender)
2tbsp minced fresh corriander
1tbsp minced ginger root and garlic
1/2tsp ground cinnamon, pepper, dried oregano, thyme
1/4 tsp salt and ground cumin
1/4 tsp of grinded lemon rind
Squeeze one fresh lemon juice.
mix all ingredience and roll into small balls, put wooden skewer through and flatten meat balls. Place on sheet and refrigarate or cook on bbQ on medium heat till cooked
dip kabobs in cucumber Yogurt.
Cucumber yogurt:
1 cup plain yogurt
1/2 c grated peeled cucumber
1 green onion thinly sliced
1 tspn lemon juice
1/2 tspn salt and granualted sugar
Can also stuff ingredience with lettuce into a pita.
