Beef Stew

Can’t remember where I got this but it is good!!
This will make 4 suppers for 2. Use a large pot.
4 lbs stewing beef, cubed
4 Tbsp flour mixed with salt and pepper to taste
1 Tbsp olive oil
2 onions, coarsely chopped
2 cloves garlic, coarsely chopped
1 bottle red wine
2 bay leaf
1 tsp thyme
Dash pepper and salt
Pour the flour and seasoning in a plastic bag, add half the beef cubes, toss well.Take out the beef and shake off excess flour. Do the same with the remainder of the beef.Heat the pot over medium heat, add the oil and fry as many of the cubes as will possibly go on the bottom of the pan without crowding. Cook 2 – 3 minutes until light brown and then turn them over. Remove them and continue with all of the beef cubes.Fry onions in the pot over medium heat add more oil if needed. Cook for 2 mins and add the garlic and cook for another 2 mins scraping the brown bits off the bottom to add flavour, add a little wine if needed.Now add the beef back into the pan, add the wine and bay leaf, thyme, salt and pepper.Bring to a boil and then simmer for 2 hours, occasionally stirring the stew. Add more wine if needed.Turn off the heat and then cool for 30 mins. Place into 4 ziploc freezer bags or containers.When ready to have stew for dinner, defrost the package and add potatoes and carrots and it will be ready in 30 mins. Add wine as necessary.
