2012 MacRendezVous Chef Speedo Prosciutto Salmon

Our 20th anniversary dish was created with our Italian theme:
Galley Chef Extraordinare Speedo Saynomore fine culinary creation:
Cut Salmon fillets into 1″ or 2″ steaks.
Wrap the steaks with prosciutto with ends at the bottom (skin side down.
But first baste the steaks with:
Sauce:
1/4 cup Dijon Mustard
1/4 white wine ( chardonnay or Suav. Blanc)
1-2 tpsn olvie oil
4 cloves dices roasted or not garlic
4 tsp of Italian mixed herbs
4 tsp fresh chopped Sage or Taragon
sea salt and pepper to taste.
Mix well and coat the fillets with ingrediens you can let stan for 1 hour.
Before you roll it in the prosciutto cut a slice of artichoke and place on top of fillet.
Cook on barby or roll in tent foil, when it puffs up not more that 10 min. let rest and serve with:
4 cheeze, garlic sauce and diced spinach, with fettuchini noodles.
or any red sauces like roasted peppers, or pesto sauce.
